Fiber Benefits and Recipe

The secret to long term weight loss and optimal digestive health and heart health is a high fiber diet. Vegetables, fruits, nuts, legumes and whole grains have lots of fiber. Most of us get 12-15 grams of fiber-we should shoot for 35 grams. Here’s a delicious recipe with lots of fiber.
Apple Walnut Salad:
1 cup apple cider, 2 tbs. red wine vinegar, one fourth cup minced red onion, 2 tsp. Dijon mustard, 3 tbs. olive oil, 10oz. mixed salad greens, 2 apples, cored and thinly sliced (pears are fine too) and one half cup chopped walnuts.
Boil the cider until reduced to one fourth cup (the consistency of syrup), 5-7 minutes. In a large bowl, whisk the reduced cider with the vinegar, onion, mustard and oil. Toss the salad greens with the dressing. Top with the apple, and walnuts .
